Autumn Spice Roasted Sweet Potatoes and Chickpeas

Ingredients
  

  • 1 lb. sweet potatoes peeled and cut into 1/2 -1-inch cubes
  • 1 1/2 cups cooked chickpeas may be from 1 (15 oz. can, drained and rinsed
  • 2 tbsp melted coconut oil or avocado oil
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Preheat oven to 400 degrees F, and line a large baking sheet with parchment paper.
  • Combine sweet potatoes, chickpeas, oil, and spices in a large bowl and mix well. Pour and spread evenly onto the prepared baking sheet.
  • Roast 35-40 minutes, stirring once halfway through baking, until the potatoes are lightly caramelized on the sides.
