Easy Vegan Nachos

Ingredients
  

  • 4 tortillas cut into triangles OR 4 portions of tortilla chips
  • 1 cup vegan cheddar shreds
  • 1 cup cooked black beans
  • 1/2 tsp ground cumin
  • 1/2 cup your favorite salsa
  • Chopped fresh cilantro for serving

Guacamole:

  • 2 ripe avocados pitted and peeled
  • Juice of 1/2 lime
  • 1/4 cup red onion diced
  • 1/4 cup fresh cilantro chopped
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 400 degrees F.
  • Evenly arrange tortilla triangles/chips in a baking pan (I used a cast-iron skillet). Sprinkle cheese over the chips, then bake in the oven for 10-15 minutes, until the chips are golden and the cheese is melted.
  • Meanwhile, stir together the beans and cumin in a small bowl.
  • To make the guacamole, mash the avocado flesh in a bowl, then stir in the remaining ingredients until everything is nicely combined.
  • When the chips have finished baking, evenly distribute spoonfuls of the beans and salsa onto them. Dollop the guacamole right into the center, garnish with fresh cilantro, and serve warm!
