4tortillascut into triangles OR 4 portions of tortilla chips
1cupvegan cheddar shreds
1cupcooked black beans
1/2tspground cumin
1/2cupyour favorite salsa
Chopped fresh cilantrofor serving
Guacamole:
2ripe avocadospitted and peeled
Juice of 1/2 lime
1/4cupred oniondiced
1/4cupfresh cilantrochopped
1/2tspsalt
Instructions
Preheat oven to 400 degrees F.
Evenly arrange tortilla triangles/chips in a baking pan (I used a cast-iron skillet). Sprinkle cheese over the chips, then bake in the oven for 10-15 minutes, until the chips are golden and the cheese is melted.
Meanwhile, stir together the beans and cumin in a small bowl.
To make the guacamole, mash the avocado flesh in a bowl, then stir in the remaining ingredients until everything is nicely combined.
When the chips have finished baking, evenly distribute spoonfuls of the beans and salsa onto them. Dollop the guacamole right into the center, garnish with fresh cilantro, and serve warm!
