1lb.mixed vegetables of choicesuch as cherry tomatoes, zucchini, bell peppers, yellow squash, carrots, cut into 1/2-inch pieces
3tbspolive oil
3clovesgarlicpeeled, minced
1tsp dried basil
1tspdried oregano
1/2tspsea salt
1/2tspground black pepper
Instructions
Preheat the oven to 400. Line a large sheet pan with parchment paper.
Combine all of the chopped vegetables in a large bowl.
Stir together the oil, garlic, herbs, and seasonings in a small bowl, then pour over the vegetables and stir until everything is evenly coated.
Spread the veggies onto the prepared pans in a single layer, then bake for 30-40 minutes, or until the vegetables are tender, slightly browned, and caramelized. Enjoy!
