Garlic and Herb Roasted Vegetables

Ingredients
  

  • 1 lb. mixed vegetables of choice such as cherry tomatoes, zucchini, bell peppers, yellow squash, carrots, cut into 1/2-inch pieces
  • 3 tbsp olive oil
  • 3 cloves garlic peeled, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Preheat the oven to 400. Line a large sheet pan with parchment paper.
  • Combine all of the chopped vegetables in a large bowl.
  • Stir together the oil, garlic, herbs, and seasonings in a small bowl, then pour over the vegetables and stir until everything is evenly coated.
  • Spread the veggies onto the prepared pans in a single layer, then bake for 30-40 minutes, or until the vegetables are tender, slightly browned, and caramelized. Enjoy!
