Spinach and Garlic Hummus

Course Appetizer, dip

Ingredients
  

  • 1 1/2 cups cooked chickpeas or 1 15 oz. can, drained and rinsed
  • 1 1/2 cups fresh spinach
  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice from 1 lemon
  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1-2 tbsp water as needed to reach desired consistency
  • Fresh parsley chopped

Instructions
 

  • Simply add all hummus ingredients except for parsley to a food processor and blend until smooth, stopping to scrape down the sides of the bowl as needed.
  • Scoop into a bowl, garnish with parsley, and serve!
