Strawberry Chocolate Chip Buckwheat Muffins

Ingredients
  

  • 1/2 cup buckwheat flour
  • 1/2 cup oat flour gluten-free if needed
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil melted
  • 2 flax eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries chopped
  • 1/2 cup semisweet chocolate chips

Instructions
 

  • Preheat oven to 350 degrees F. Line a 12-cup muffin pan with muffin cups or grease with cooking spray.
  • Stir together the flours, cinnamon, baking powder, baking soda and salt in a large bowl.
  • Whisk together the maple syrup, oil, flax eggs, and vanilla in a separate bowl.
  • Stir liquid mixture into the flour mixture just until evenly combined, then add in the strawberries and chocolate chips.
  • Divide batter among the 10 muffin cups, then bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then remove to finish cooling on a wire rack.
