Place the quinoa in a fine mesh strainer and rinse well under running water.
Heat the quinoa and non-dairy milk to a boil in a small saucepan. Add the cinnamon and salt. Reduce heat to simmer, covered, for 15 minutes or until the liquid has been absorbed by the quinoa and it is nice and creamy.
Scoop into bowls and top with the toppings of your choosing. Enjoy!
