Banana Chocolate Chip Protein Pancakes

Ingredients
  

  • 1 large very ripe banana mashed
  • 1 cup soy milk or other non-dairy milk
  • 1 tbsp melted vegan butter or oil
  • 1 cup flour*
  • 1 scoop vanilla or chocolate protein powder
  • 1 tbsp ground flaxseed optional
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Coconut oil or vegan butter for cooking
  • Semisweet chocolate chips and extra sliced banana coins for filling
  • Pure maple syrup for topping

Instructions
 

  • Whisk together the milk, mashed banana, and butter/oil in a large bowl. Add the flour, protein powder, flaxseed, baking powder, cinnamon, and salt, then mix everything together, just until combined.
  • Heat a bit of oil/butter in a large skillet over medium heat. Pour 1/4-1/3 cup mounds of batter onto the skillet. Sprinkle on the chocolate chips and, if desired, some banana slices. Allow to cook for a few minutes, until bubbles form and you can slide a spatula underneath. Flip and cook for a few more minutes, until set and golden.
  • Serve with pure maple syrup and any other toppings you love. Enjoy!

Notes

*Note: All-purpose flour, gluten-free all-purpose flour, spelt flour, and oat flour all work well!
