1/2cupflouroat, spelt, all-purpose, or gluten-free 1-1 flour all work well
1/2tbspground flaxseed
1/2tspcinnamon
1/2tspbaking powder
a pinch of sea salt
1/2cupnon-dairy milk
1tspcoconut oilmelted, plus more for cooking
Semisweet chocolate chipsoptional
Maple syrup and fresh fruit for serving
Instructions
Mix together dry ingredients in a small bowl. Pour in the milk, and mix until well combined.
Melt coconut oil in a skillet over medium low heat. Drop the batter onto the skillet using a ΒΌ cup measure. Sprinkle pancakes with chocolate chips, if desired, and allow to cook 2 to 3 minutes, until bubbles form around the edges. Flip and cook another minute, until fully set.
Serve with berries and pure maple syrup.
