Vegan Pancakes for One

Ingredients
  

  • 1/2 cup flour oat, spelt, all-purpose, or gluten-free 1-1 flour all work well
  • 1/2 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • a pinch of sea salt
  • 1/2 cup non-dairy milk
  • 1 tsp coconut oil melted, plus more for cooking
  • Semisweet chocolate chips optional
  • Maple syrup and fresh fruit for serving

Instructions
 

  • Mix together dry ingredients in a small bowl. Pour in the milk, and mix until well combined.
  • Melt coconut oil in a skillet over medium low heat. Drop the batter onto the skillet using a ΒΌ cup measure. Sprinkle pancakes with chocolate chips, if desired, and allow to cook 2 to 3 minutes, until bubbles form around the edges. Flip and cook another minute, until fully set.
  • Serve with berries and pure maple syrup.
