Pumpkin Pie Smoothie Bowl

I am not ashamed to admit to being one of the many people who get excited to enjoy pumpkin flavored foods once the fall season rolls around. As the weather has still been relatively warm, pumpkin smoothies satisfy the craving for something that is both refreshing and seasonal!As the name implies, this smoothie is like pumpkin pie in a bowl! If you don’t have pumpkin or would like to try something just a bit different, you may also use cooked butternut squash or sweet potato in its place. All three options provide fall flavors and creaminess, and are an excellent source of fiber and beta-carotene! I also like to add a scoop of vanilla protein powder to add a bit more flavor and make the bowl more satisfying. I hope you try it out and enjoy!

Ingredients
  1. 1/2 cup unsweetened non-dairy milk
  2. 1/2 cup pureed pumpkin (may be from can)
  3. 2 Medjool dates, pitted, or 1 tbsp maple syrup
  4. 1 scoop vanilla protein powder
  5. 1 tbsp nut/seed butter of choice
  6. 1/2 tsp pumpkin pie spice
  7. Toppings: granola, pumpkin seeds, hemp seeds, etc.
Instructions
  1. Add all ingredients to a high-speed blender and blend until smooth. Taste to make sure it is sweet enough for your liking, and add an extra tsp of maple syrup if desired.
  2. Pour into a bowl, top with desired toppings, and enjoy!
